Banh Mi–Inspired Pork Bowl
A typical banh mi is a baguette sandwich filled with a Vietnamese-seasoned meat and pickled vegetables. This salad mimics those flavours, making it an addictive (and low-carb) bowl that you’ll want to make over and over again!

For Crema
- 3 tablespoons sour cream
- 3 tablespoons mayonnaise
- ¾ tablespoon fresh lime juice
- ½ teaspoon salt
For Vegetables
- 4 medium radishes julienned
- 1 medium shallot peeled and thinly sliced
- 2 ¼ tablespoons apple cider vinegar
- ⅛ teaspoon salt
- 2 medium carrots peeled and shaved into ribbons
- 4 cups shredded wombok cabbage
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh mint
For Pork
- ¾ tablespoon sesame oil
- ¾ tablespoon coconut aminos
- 2 teaspoons red chilli paste
- 2 teaspoons erythritol sweetener
- 1 3cm knob fresh ginger, peeled and minced
- 1 450 gram pork shoulder, trimmed and thinly sliced into 3cm strips
- 1 ½ tablespoons water
Instructies
To make Crema:
- In a small bowl, whisk together ingredients.
- Refrigerate covered until ready to use.
To make Vegetables:
- In a medium bowl, add radishes, shallot, apple cider vinegar and salt.
- Refrigerate covered until ready to use.
To make Pork:
- In a medium bowl, whisk together sesame oil, coconut aminos, red chilli paste, erythritol and ginger.
- Set aside half of marinade.
- Add pork strips to bowl with remaining marinade and toss.
- Refrigerate covered until ready to use.
- Preheat air fryer at 180°C for 3 minutes.
- Pour water in bottom of air fryer to ensure minimum smoke from fat drippings.
- Add pork to ungreased air fryer basket.
- Cook for 5 minutes.
- Toss.
- Cook for 6 minutes.
- Toss once more and cook for an additional 6 minutes.
- Transfer pork to bowl with remaining marinade and toss.
- Add carrots to ungreased air fryer basket and cook for 2 minutes.
To assemble:
- Distribute cabbage, basil and mint in four medium bowls.
- Top with pork and vegetables.
- Drizzle crema over the top and serve.
