Barbecue Chicken Meatballs
These delectable meatballs are filled with barbecue flavour down to the pork rinds. If you can’t get your hands on barbecue-flavoured pork rinds, just substitute the plain variety — they will still work. Also, add a little cayenne pepper to the mix if you like the heat!

- 450 grams chicken mince
- 1 large egg
- ½ cup crushed barbecue-flavoured pork rinds
- ¾ tablespoon sour cream
- 2 teaspoons brown mustard
- 1 ½ tablespoons peeled and grated brown onion
- 1 ½ tablespoons no-added-sugar tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon chilli powder
Instructions
- Preheat air fryer at 180°C for 3 minutes.
- Combine all ingredients in a large bowl.
- Form into 18 meatballs, about 2 tablespoons each.
- Add half of meatballs to air fryer basket lightly greased with olive oil and cook for 6 minutes.
- Shake basket and cook for an additional 2 minutes.
- Transfer cooked meatballs to a large serving dish and repeat cooking with remaining meatballs.
- Serve warm.
