Barbecue Chicken Meatballs

These delectable meatballs are filled with barbecue flavour down to the pork rinds. If you can’t get your hands on barbecue-flavoured pork rinds, just substitute the plain variety — they will still work. Also, add a little cayenne pepper to the mix if you like the heat!

Ingredients

  • 450 grams chicken mince
  • 1 large egg
  • ½ cup crushed barbecue-flavoured pork rinds
  • ¾ tablespoon sour cream
  • 2 teaspoons brown mustard
  • 1 ½ tablespoons peeled and grated brown onion
  • 1 ½ tablespoons no-added-sugar tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli powder

Instructions

  • Preheat air fryer at 180°C for 3 minutes.
  • Combine all ingredients in a large bowl.
  • Form into 18 meatballs, about 2 tablespoons each.
  • Add half of meatballs to air fryer basket lightly greased with olive oil and cook for 6 minutes.
  • Shake basket and cook for an additional 2 minutes.
  • Transfer cooked meatballs to a large serving dish and repeat cooking with remaining meatballs.
  • Serve warm.
