Barbecued Chicken Pizza

Keeping a supermarket pizza in the freezer is fine for emergencies, but if your pizza choices are like those in my supermarket — thin-crusted and skimpy on the cheese and meat — you’re getting more of a snack than a meal. Buy an inexpensive pizza for this recipe. Check the directions and choose the brand that bakes the fastest. Then heap the crust with barbecued chicken and cheese for a mouthwatering meal. Serve salad on the side.

Ingredients

  • 1 frozen thin-crust cheese pizza, about 12 inches in diameter
  • 1 container or tub 20 ounces barbecue sauce with shredded chicken, fully cooked
  • 1 large tomato thinly sliced
  • 1 cup shredded Mexican-style cheese

Instructions

  • Preheat the oven to 400 degrees.
  • Place the pizza on a cookie sheet.
  • Spread the barbecue sauce with shredded chicken over the surface of the pizza.
  • Arrange the tomato slices over the chicken.
  • Sprinkle the cheese over the chicken.
  • Bake the pizza for 15 minutes or until the cheese is melted and lightly browned.
  • Remove the pizza from the oven and let stand 1 minute.
  • Cut into wedges to serve.

Vary It!

Substitute barbecue sauce with shredded pork, fully cooked, for the shredded chicken. Use shredded cheddar cheese over the pork.
