Bean and Cheese Nachos
Nachos de Frijol y QuesoNachos are a classic Mexican appetizer that also easily satisfies hungry munchers throughout the United States. A simple topping for nachos is refried beans, cheese, and a dollop of spicy red salsa.
Ingredients
Makes 36 nachos
- 36 Toasted Corn Tortilla Chips or purchased
- 1 cup refried beans canned or homemade
- 1 cup shredded Monterey Jack cheese or other melting cheese
- ½ cup red salsa purchased or homemade
Instructions
- Prepare the tortilla chips, if using homemade.
- Then, preheat the broiler.
- Spread refried beans over each tortilla chip.
- Top with a mound of cheese, and lay the chips in a single layer on a baking sheet.
- Heat under the broiler until the cheese is melted and bubbly, about 1 minute.
- Top each chip with a dollop of salsa.
- Serve at once.
