Bean Feta Stew
Ingredients
- 2 15.5 oz cans cannellini beans, drained
- 1 14.4 oz can petite diced tomatoes
- 1 tbsp extra-virgin olive oil
- 2 cloves garlic chopped
- 1 pinch red pepper flakes or to taste
- optional
- ¼ C. crumbled feta cheese
- ¼ C. chopped fresh cilantro
Instructions
- Place a large saucepan on medium heat.
- Stir in the beans, tomatoes, olive oil, garlic and red pepper flakes then cook them until they start boiling.
- Stir in the cheese with cilantro.
- Serve your stew warm.
