Bean Feta Stew

Ingredients

  • 2 15.5 oz cans cannellini beans, drained
  • 1 14.4 oz can petite diced tomatoes
  • 1 tbsp extra-virgin olive oil
  • 2 cloves garlic chopped
  • 1 pinch red pepper flakes or to taste
  • optional
  • ¼ C. crumbled feta cheese
  • ¼ C. chopped fresh cilantro

Instructions

  • Place a large saucepan on medium heat.
  • Stir in the beans, tomatoes, olive oil, garlic and red pepper flakes then cook them until they start boiling.
  • Stir in the cheese with cilantro.
  • Serve your stew warm.
