Berry Muffins
Ingredients
- 1¾ cups all-purpose flour
- 1 cup plus 2 T. sugar divided
- 2½ tsp. baking powder
- ½ tsp. cinnamon
- ¼ tsp. salt
- 1 cup milk
- ¼ cup ½ stick butter, melted
- 1 egg beaten
- 1 tsp. vanilla
- 1 cup berries fresh or frozen (blueberries, blackberries, cranberries…)
Instructions
- Preheat the oven to 375°.
- In a large bowl, whisk together the flour, 1 cup of the sugar, baking powder, cinnamon, and salt.
- In another bowl, stir together the milk, butter, egg, and vanilla.
- Add to the dry ingredients and stir just until blended.
- Do not overmix.
- Fold in the berries.
- Fill greased muffin cups ¾ full.
- Sprinkle with the remaining 2 tablespoons sugar.
- Bake for 20 minutes or until done.
- Remove the muffins from the pan and cool on a wire rack.
