Berry Muffins

Ingredients

  • cups all-purpose flour
  • 1 cup plus 2 T. sugar divided
  • tsp. baking powder
  • ½ tsp. cinnamon
  • ¼ tsp. salt
  • 1 cup milk
  • ¼ cup ½ stick butter, melted
  • 1 egg beaten
  • 1 tsp. vanilla
  • 1 cup berries fresh or frozen (blueberries, blackberries, cranberries…)

Instructions

  • Preheat the oven to 375°.
  • In a large bowl, whisk together the flour, 1 cup of the sugar, baking powder, cinnamon, and salt.
  • In another bowl, stir together the milk, butter, egg, and vanilla.
  • Add to the dry ingredients and stir just until blended.
  • Do not overmix.
  • Fold in the berries.
  • Fill greased muffin cups ¾ full.
  • Sprinkle with the remaining 2 tablespoons sugar.
  • Bake for 20 minutes or until done.
  • Remove the muffins from the pan and cool on a wire rack.
