BLT Frittata
This dish is heartyenough for a brunch and perfect for replenishing your energy after a morningexercise routine. You get all of the flavours of a BLT without the guilt of thegrain!

- 5 large eggs
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 4 slices cooked sugar-free bacon diced
- ½ cup grated Cheddar cheese
- 1 large Roma tomato cored and sliced
- 1 cup shredded iceberg lettuce
- 1 ½ tablespoons sour cream
Instructions
- Preheat air fryer at 160°C for 3 minutes.
- In a medium bowl, whisk together eggs, salt and pepper.
- Stir in bacon and Cheddar cheese.
- Pour mixture into a cake barrel lightly greased with olive oil.
- Place tomato slices on top.
- Place barrel in air fryer basket and cook for 14 minutes.
- Transfer cake barrel to a cooling rack to cool for 5 minutes, then slice frittata and serve warm topped with lettuce and sour cream.
