BLT Frittata

This dish is heartyenough for a brunch and perfect for replenishing your energy after a morningexercise routine. You get all of the flavours of a BLT without the guilt of thegrain!

Ingredients

  • 5 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 4 slices cooked sugar-free bacon diced
  • ½ cup grated Cheddar cheese
  • 1 large Roma tomato cored and sliced
  • 1 cup shredded iceberg lettuce
  • 1 ½ tablespoons sour cream

Instructions

  • Preheat air fryer at 160°C for 3 minutes.
  • In a medium bowl, whisk together eggs, salt and pepper.
  • Stir in bacon and Cheddar cheese.
  • Pour mixture into a cake barrel lightly greased with olive oil.
  • Place tomato slices on top.
  • Place barrel in air fryer basket and cook for 14 minutes.
  • Transfer cake barrel to a cooling rack to cool for 5 minutes, then slice frittata and serve warm topped with lettuce and sour cream.
