Blue Cheese and Pine Nut Canapés

Ingredients

  • 10 tablespoons strong blue cheese like Roquefort or Gorgonzola, at room temperature
  • 5 slices of sandwich bread with the crust removed
  • 5 tablespoons pine nuts
  • 5 pitted black olives preferably Spanish, sliced

Instructions

  • In a small bowl, use a fork to mash the blue cheese until it reaches a smooth consistency suitable for spreading.
  • Spread the smooth blue cheese onto each bread slice and then cut each slice into 4 triangles.
