Breakfast Tater Tot Casserole

This Is A Robust Egg Bake Filled With Spinach, Mushrooms, Onions, Cheese, And Tater Tots. It’s Vegetarian As Written, But Add Some Ham, Sausage, Or Bacon If You Prefer. Just Be Sure Meats Are Fully Cooked Before Adding Them To The Dish. If You Are Short On Time In The Morning, Assemble The Dish The Night Before, Cover And Refrigerate It, Then Bake It The Next Day.

Ingredients

  • 1 Tablespoon Salted Butter
  • ½ Cup Frozen Chopped Onions
  • ½ Cup Frozen Sliced White Mushrooms
  • ½ Cup Frozen Chopped Spinach
  • ¾ Teaspoon Kosher Salt Divided
  • 4 Large Eggs
  • 1 Cup 1% Milk
  • ¼ Teaspoon Ground Black Pepper
  • 1 Cup 4 Ounces Shredded Cheddar Cheese
  • 1 Pound Frozen Tater Tots

Instructions

  • Preheat Oven To 425°F.
  • Grease A 2-Quart 7″ × 11″ Baking Pan With Nonstick Spray.
  • Heat A Large Skillet Over High Heat.
  • When Hot, Add Butter, Onions, Mushrooms, Spinach, And ¼ Teaspoon Salt.
  • Sauté Until Vegetables Soften And Any Moisture Has Evaporated, About 3–4 Minutes.
  • Spread Evenly In Prepared Baking Pan.
  • In A Small Bowl, Beat Together Eggs, Milk, Remaining ½ Teaspoon Salt, And Pepper.
  • Add To Baking Pan And Top With Cheddar.
  • Heat Tater Tots In The Microwave To Thaw, About 2 Minutes.
  • Arrange On Top Of Cheese Layer And Bake Until Eggs Are Set, 20–22 Minutes.
  • Serve Hot.
