Broccoli Casserole
People who don’t really care for broccoli will find themselves scooping up a second helping of this creamy casserole.

- 4 cups steamed broccoli florets about 1 large head, chopped
- ¼ cup peeled diced brown onion
- ½ cup diced white mushrooms
- 1 large egg
- 1 ½ tablespoons sour cream
- ¼ cup mayonnaise
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 cup coarsely crushed Cheddar cheese crisps
Instructions
- In a large bowl, combine broccoli, onion, mushrooms, egg, sour cream, mayonnaise, salt and pepper.
- Spoon mixture into a round cake barrel.
- Preheat air fryer at 180°C for 3 minutes.
- Cook casserole for 14 minutes.
- Remove barrel from air fryer and let rest for 10 minutes.
- Evenly distribute crushed Cheddar cheese crisps over the top of casserole and serve warm.
