Brown Sugar–Vanilla Banana Butter
Ingredients
- 4 cups mashed bananas approximately 12 very ripe bananas
- ½ cup lemon juice
- 1 1.75-ounce box powdered fruit pectin.
- ½ teaspoon butter
- 2 teaspoons vanilla extract
- 4 cups brown sugar
- 2 cups sugar
Instructions
- In a large kettle or saucepan, combine mashed bananas, lemon juice, pectin, butter, and vanilla.
- Bring to a boil over medium heat, stirring constantly.
- Add sugars and boil hard for 1 minute, stirring constantly.
- Ladle into clean jars and process for 10 minutes in boiling-water bath.
