Brown Sugar–Vanilla Banana Butter

Ingredients

  • 4 cups mashed bananas approximately 12 very ripe bananas
  • ½ cup lemon juice
  • 1 1.75-ounce box powdered fruit pectin.
  • ½ teaspoon butter
  • 2 teaspoons vanilla extract
  • 4 cups brown sugar
  • 2 cups sugar

Instructions

  • In a large kettle or saucepan, combine mashed bananas, lemon juice, pectin, butter, and vanilla.
  • Bring to a boil over medium heat, stirring constantly.
  • Add sugars and boil hard for 1 minute, stirring constantly.
  • Ladle into clean jars and process for 10 minutes in boiling-water bath.
