  • ¾ cup of Panko breadcrumbs
  • 1 large egg
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • 2 green onions thinly sliced
  • Kosher salt and fresh ground black pepper to taste
  • ¾ cup of buffalo sauce
  • ¼ cup blue cheese dressing optional

Instructions

  • Preheat the oven to 400°F (204°C).
  • Line a cookie sheet with parchment paper and set aside.
  • In a large mixing bowl, combine the ground chicken, Panko breadcrumbs, egg, garlic powder, onion powder, sliced green onions, salt, and pepper.
  • Mix well using clean hands.
  • Roll the mixture into 1 ¼-inch meatballs, making about 24 meatballs.
  • Place the meatballs on the prepared cookie sheet and bake for 4 to 5 minutes to brown the sides.
  • Transfer the browned meatballs to a slow cooker and add the buffalo sauce.
  • Toss the meatballs to ensure they are completely coated with the sauce.
  • Cook the meatballs in the slow cooker on low heat for two hours.
  • Before serving, drizzle with blue cheese dressing, if desired.
