Buttered Scallion Soup with Cheddar Panini
It is a satisfying panini recipe that one can take as lunch or dinner. The soup is sweet and nutritious for the whole family.

- 3 tbsp butter
- 3 boxes 10 oz. each frozen peas
- 1 ½ cups shredded sharp white cheddar
- Coarse salt and ground pepper
- 4 thinly sliced scallions with white and green parts separated
- 1 can 14.5 oz. reduced-sodium chicken broth
- 8 slices rye sandwich bread
- 1 tbsp fresh lemon juice
Instructions
- In a saucepan, melt the butter.
- Add the scallion whites and cook them until they become soft.
- Add the broth, peas, and 3 cups of water.
- Boil the mixture at simmering heat, allowing them to cook until they become tender.
- Remove from the heat, then set them aside.
- In a separate bowl, mix the scallion greens and cheddar.
- Brush a slice of bread with the oil, then place the cheddar mix between them.
- Top the cheddar mix with the other slice of bread.
- Preheat your grill, then cook the sandwich in it.
- Cook until the sandwich becomes golden in color and crisp.
- In a blender, process the pea mixture until it becomes smooth.
- Add lemon juice and seasonings.
- Slice the sandwich into finger strips.
- Serve it with the soup.
