Buttered Scallion Soup with Cheddar Panini

Ingredients

  • 3 tbsp butter
  • 3 boxes 10 oz. each frozen peas
  • 1 ½ cups shredded sharp white cheddar
  • Coarse salt and ground pepper
  • 4 thinly sliced scallions with white and green parts separated
  • 1 can 14.5 oz. reduced-sodium chicken broth
  • 8 slices rye sandwich bread
  • 1 tbsp fresh lemon juice

Instructions

  • In a saucepan, melt the butter.
  • Add the scallion whites and cook them until they become soft.
  • Add the broth, peas, and 3 cups of water.
  • Boil the mixture at simmering heat, allowing them to cook until they become tender.
  • Remove from the heat, then set them aside.
  • In a separate bowl, mix the scallion greens and cheddar.
  • Brush a slice of bread with the oil, then place the cheddar mix between them.
  • Top the cheddar mix with the other slice of bread.
  • Preheat your grill, then cook the sandwich in it.
  • Cook until the sandwich becomes golden in color and crisp.
  • In a blender, process the pea mixture until it becomes smooth.
  • Add lemon juice and seasonings.
  • Slice the sandwich into finger strips.
  • Serve it with the soup.
