  • Muffin mix/cornbread 1 package 8-1/2 ounces
  • Ground beef 1 pound
  • Tomato paste 1 can 6 ounces
  • Drained diced tomatoes 2 cans (14-1/2 ounces each)
  • Thawed mixed frozen vegetables 2 cups
  • Cajun seasoning 1-2 teaspoon
  • Cheddar cheese 1 cup shredded
  • Thinly sliced green onion 2

Instructions

  • Preheat the oven to 350°
  • Prepare the batter of cornbread according to the direction of the package.
  • Spread it into the greased 11×7-inch baking dish.
  • Take a large skillet, cook the beef on medium heat until it gets changed its color, then drain it well.
  • Add the seasoning, tomato paste, vegetables, and tomatoes.
  • Let it boil.
  • Reduce the heat, uncovered, and simmer it for just 5 minutes.
  • Pour it on the batter.
  • Sprinkle it with cheese.
  • Uncovered and bake it until it gets golden brown, for 25 to 30 minutes.
  • Sprinkle it with onion and enjoy.
