- Muffin mix/cornbread 1 package 8-1/2 ounces
- Ground beef 1 pound
- Tomato paste 1 can 6 ounces
- Drained diced tomatoes 2 cans (14-1/2 ounces each)
- Thawed mixed frozen vegetables 2 cups
- Cajun seasoning 1-2 teaspoon
- Cheddar cheese 1 cup shredded
- Thinly sliced green onion 2
Instructions
- Preheat the oven to 350°
- Prepare the batter of cornbread according to the direction of the package.
- Spread it into the greased 11×7-inch baking dish.
- Take a large skillet, cook the beef on medium heat until it gets changed its color, then drain it well.
- Add the seasoning, tomato paste, vegetables, and tomatoes.
- Let it boil.
- Reduce the heat, uncovered, and simmer it for just 5 minutes.
- Pour it on the batter.
- Sprinkle it with cheese.
- Uncovered and bake it until it gets golden brown, for 25 to 30 minutes.
- Sprinkle it with onion and enjoy.
