Candied Sweet Potatoes

Sweet potatoes have traditionally had two steps to their preparation and eating. One evening the whole sweet potatoes were steamed in their jackets, then eaten for supper, spread with butter and sprinkled with salt. The cooked potatoes that were not eaten (a large batch was prepared so a meal’s-worth would be left) were fried for the next day’s dinner or supper.

Ingredients

  • 6 medium sweet potatoes cooked
  • salt
  • ¼ cup butter or margarine
  • ¾ cup brown sugar
  • ¾ cup water

Instructions

  • Remove peels form cooked sweet potatoes.
  • Cut potatoes in half lengthwise.
  • Melt the butter or margarine in a frying pan.
  • Add sugar and stir until it melts.
  • Add water and bring to a boil.
  • Lay sweet potato slices in syrup and cook slowly, using metal spatula to turn slices so both sides brown evenly.
