Ingredients

  • 6 or 7 fresh basil leaves washed
  • Kosher salt
  • Fresh ground black pepper
  • 2-3 oz. Mozzarella cheese
  • 1 Roma tomato sliced
  • 2 slices sourdough bread
  • Butter or butter spread
  • Olive oil for cooking

Instructions

  • On a griddle set to 325°F or in a skillet over medium heat, sprinkle a little olive oil.
  • Place the tomato slices into the oil and lightly season with salt and pepper.
  • Cook the tomato slices for 1 minute, then flip them.
  • Season the other side with salt and pepper.
  • Remove from heat promptly to avoid overcooking.
  • Butter one side of each slice of sourdough bread.
  • On one slice of bread, layer half of the Mozzarella cheese, followed by the cooked tomato slices and fresh basil leaves.
  • Add the remaining Mozzarella cheese on top of the basil leaves, then cover with the second slice of bread, buttered side facing out.
  • Cook the sandwich at 325°F for four minutes on each side.
  • Be cautious while flipping to prevent sliding.
  • Serve hot and enjoy the delightful flavors of this Caprese-inspired creation!
