Caprese Hasselback Tomatoes

With this recipe, you don’t want the cheese to be completely melted. The air fryer simply softens up the mozzarella while heating the tomatoes just enough to bring out their natural sugars. And don’t forget to use fresh basil leaves — they are everything in a caprese dish!

Ingredients

  • 4 medium Roma tomatoes bottoms removed to create flat surfaces
  • 16 fresh basil leaves
  • 230 gram ball fresh mozzarella sliced and then cut into 16 pieces
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¾ tablespoon olive oil
  • 2 teaspoons balsamic vinegar

Instructions

  • Preheat air fryer at 160°C for 3 minutes.
  • Make four even slices on each tomato, three-quarters of the way down.
  • Stuff one basil leaf and a piece of mozzarella into each slice.
  • Season with salt and pepper.
  • Place stuffed tomatoes in ungreased air fryer basket.
  • Cook for 3 minutes.
  • Transfer to a large serving plate.
  • Drizzle tomatoes with olive oil and balsamic vinegar and serve.
