Caramel Icing

“My mother liked a caramel icing made with brown sugar. She didn’t really have a recipe.” This grandmother’s account is typical. Here is a written approximation of what she enjoyed on chocolate cake.

Ingredients

  • ½ cup butter or margarine
  • 1 cup brown sugar
  • ¼ cup milk
  • –2 cups sifted confectioner’s sugar

Instructions

  • Melt butter in saucepan.
  • Add brown sugar and cook over low heat two minutes, stirring constantly.
  • Add milk and continue stirring until mixture comes to a boil.
  • Remove from heat and cool.
  • Add confectioner’s sugar until frosting reaches spreading consistency.
