Cheese, Jicama, and Green Chile Nachos

Nachos de Queso, Jicama, y Chile Poblano
These are great do-it-yourself party nachos. Each person assembles his or her own stacked nachos from a selection of ingredients that are arranged on a platter. It's a wonderful taste and texture combination.

Ingredients

Makes 36 nachos

  • 36 Toasted Corn Tortilla Chips or purchased
  • 1 pound Monterey Jack cheese cut into 36 2-inch squares
  • 1 medium jicama about 1 pound, cut into thin 2-inch squares
  • 4 large fresh green chiles poblanos or Anaheims, roasted and peeled; then cut into 2-inch squares
  • 1 cup lightly packed coarsely chopped fresh cilantro

Instructions

  • Prepare the tortilla chips, if using homemade.
  • Place them in a napkin-lined basket.
  • On a large serving platter, arrange the cheese, jicama, chiles, and cilantro.
  • Serve the basket of chips with the platter of ingredients next to it.
