Cheesy Bacon-and-Ham Casserole

Ingredients

Makes 8 servings / Prep: 10 min., Cook: 25 min., Bake: 35 min., Stand: 5 min.

  • 1 8-ounce package bacon slices, cut into 1-inch pieces
  • 1 8-ounce package diced cooked ham
  • ¾ cup uncooked quick-cooking grits
  • 1 16-ounce loaf pasteurized cheese product, cubed
  • ¼ cup butter or margarine
  • 6 large eggs
  • ½ cup milk
  • ½ teaspoon freshly ground black pepper

Instructions

  • Cook bacon and ham in a large nonstick skillet over medium-high heat 12 minutes or until bacon is crisp; remove bacon and ham, and drain on paper towels.
  • Cook grits according to package directions.
  • Add cheese and butter; beat at medium speed with an electric mixer until blended and cheese melts.
  • Beat in eggs, milk, and pepper.
  • Stir in bacon mixture.
  • Pour into a lightly greased 13- x 9-inch baking dish.
  • Bake at 350° for 30 to 35 minutes or until set.
  • Let stand 5 minutes before serving.
