- 6 chicken breasts
- 3 eggs beaten and salted
- Progresso bread crumbs
- 2 tablespoons melted butter
- 4 tablespoons cooking oil
- 1 can 10.5 oz cream of chicken soup
- 1 cup chicken broth
- 8 oz mozzarella cheese slices
- Cooked rice for serving
Instructions
- Preheat the oven to 350°F (175°C).
- Dip each chicken breast in the beaten and salted eggs, then coat them in bread crumbs.
- In a skillet, heat the cooking oil and melted butter over medium heat.
- Brown the breaded chicken breasts on both sides until golden brown.
- Remove from the skillet and place them in a casserole dish.
- In a bowl, mix together the cream of chicken soup and chicken broth.
- Pour the mixture over the browned chicken breasts in the casserole dish.
- Cover the casserole dish with a lid or aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the cover and place slices of mozzarella cheese over the chicken breasts.
- Return the casserole dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve the cheesy breaded chicken with cooked rice.
