Ingredients

  • 6 chicken breasts
  • 3 eggs beaten and salted
  • Progresso bread crumbs
  • 2 tablespoons melted butter
  • 4 tablespoons cooking oil
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 8 oz mozzarella cheese slices
  • Cooked rice for serving

Instructions

  • Preheat the oven to 350°F (175°C).
  • Dip each chicken breast in the beaten and salted eggs, then coat them in bread crumbs.
  • In a skillet, heat the cooking oil and melted butter over medium heat.
  • Brown the breaded chicken breasts on both sides until golden brown.
  • Remove from the skillet and place them in a casserole dish.
  • In a bowl, mix together the cream of chicken soup and chicken broth.
  • Pour the mixture over the browned chicken breasts in the casserole dish.
  • Cover the casserole dish with a lid or aluminum foil and bake in the preheated oven for 30 minutes.
  • After 30 minutes, remove the cover and place slices of mozzarella cheese over the chicken breasts.
  • Return the casserole dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Serve the cheesy breaded chicken with cooked rice.
