Cheesy Meatloaf

Ingredients
- 2 lbs ground beef
- ½ cup breadcrumbs or almond flour for keto-friendly option
- 1 red pepper chopped
- 1 green pepper chopped
- 2 onions chopped
- 2 eggs
- 1 garlic clove crushed
- ½ cup grated mozzarella or cheddar cheese for variation
Instructions
Preheat Oven:
- Preheat the oven to 350°F (175°C).
- Mix Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs (or almond flour), chopped red pepper, chopped green pepper, chopped onions, eggs, and crushed garlic clove.
- Mix well until all ingredients are evenly incorporated.
Form Loaf:
- Transfer the meat mixture into a loaf pan, pressing it down evenly to form a loaf shape.
Bake First Half:
- Bake the meatloaf in the preheated oven for 30 minutes.
- Top with Cheese: Remove the meatloaf from the oven and sprinkle the grated mozzarella (or cheddar cheese) evenly over the top of the meatloaf.
Bake Second Half:
- Return the meatloaf to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Serve:
- Remove the meatloaf from the oven and let it rest for a few minutes before slicing.
- Serve slices of cheesy meatloaf hot, with your favorite side dishes.
