Ingredients

  • 2 lbs ground beef
  • ½ cup breadcrumbs or almond flour for keto-friendly option
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 2 onions chopped
  • 2 eggs
  • 1 garlic clove crushed
  • ½ cup grated mozzarella or cheddar cheese for variation

Instructions

Preheat Oven:

  • Preheat the oven to 350°F (175°C).
  • Mix Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs (or almond flour), chopped red pepper, chopped green pepper, chopped onions, eggs, and crushed garlic clove.
  • Mix well until all ingredients are evenly incorporated.

Form Loaf:

  • Transfer the meat mixture into a loaf pan, pressing it down evenly to form a loaf shape.

Bake First Half:

  • Bake the meatloaf in the preheated oven for 30 minutes.
  • Top with Cheese: Remove the meatloaf from the oven and sprinkle the grated mozzarella (or cheddar cheese) evenly over the top of the meatloaf.

Bake Second Half:

  • Return the meatloaf to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Serve:

  • Remove the meatloaf from the oven and let it rest for a few minutes before slicing.
  • Serve slices of cheesy meatloaf hot, with your favorite side dishes.
