  • 2 10 oz. packages frozen chopped spinach, cooked and drained, or 1½ lbs. fresh spinach, cooked and finely chopped
  • 1 16 oz. carton ricotta or cottage cheese*
  • 1 cup bread crumbs or packaged herb stuffing
  • 2 eggs lightly beaten
  • ½ cup sliced fresh mushrooms or canned sliced mushrooms
  • ½ cup chopped green pepper
  • 1 cup sour cream
  • ½ cup spaghetti sauce canned or homemade (see page 36)
  • 1 lb. mozzarella cheese sliced
  • 1 teaspoon basil
  • ½ cup grated Parmesan cheese

Instructions

  • In a large bowl, combine the cooked and drained spinach, ricotta or cottage cheese, bread crumbs, lightly beaten eggs, mushrooms, and chopped green pepper.
  • Preheat the oven to 350°F.
  • Pour the spinach mixture into a buttered 13-inch baking dish and spread sour cream on top.
  • Pour a layer of spaghetti sauce over the sour cream, using most but not all of the sauce.
  • Cover the mixture with slices of mozzarella cheese.
  • Spread the remaining spaghetti sauce over the cheese slices.
  • Sprinkle basil and grated Parmesan cheese on top.
  • Bake for 30 minutes or until the dish is golden and bubbly.

For a Lower Fat Version:

To reduce the fat content, use reduced-fat ricotta or cottage cheese, reduced-fat sour cream, and only half a pound of thinly sliced mozzarella. Enjoy a lighter yet equally delicious version of this Bisignano Spinach dish!
