- 1 pound lean ground pork
- ½ pound ground beef
- ¼ cup tomato puree
- Sea salt and ground black pepper to taste
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried rosemary
- 2 eggs
- 1 cup Cottage cheese crumbled, at room temperature
- ½ cup Cotija cheese shredded
Instructions
- Lightly grease a casserole dish with nonstick cooking spray.
- Spread the ground pork and beef evenly on the bottom of the casserole dish.
- Pour the tomato puree over the meat and sprinkle with salt, black pepper, smoked paprika, oregano, basil, and rosemary.
- In a mixing bowl, whisk the eggs with the crumbled Cottage cheese and shredded Cotija cheese.
- Pour the cheese mixture over the meat layer.
- Cover with foil to retain moisture during baking.
- Bake the casserole in the preheated Air Fryer at 350°F for 10 minutes.
- Remove the foil and bake for an additional 6 minutes to allow the cheese to brown slightly.
