Cheesy Tomatoes and Asparagus

This is another take on the classic tomatoes and asparagus combination.

Ingredients

  • 1 Cup Trimmed Asparagus Spears
  • 1 ½ Cups Cherry Tomatoes
  • 1 Minced Garlic Clove
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Vinegar
  • 1 Cup Crumbled Feta
  • Salt and Pepper to Taste

Instructions

  • In a skillet, heat the olive oil and brown the garlic.
  • Toss in the asparagus and tomatoes.
  • Cook until tender and then add the vinegar, salt and pepper.
  • Plate and then sprinkle cheese on top.
  • Microwave for about 20 seconds to soften the cheese.
  • Serve immediately.
