Ingredients

  • 4 Tablespoons Salted Butter
  • 4 Cubes Frozen Crushed Garlic
  • 1 ½ Cups Frozen Chopped Onions
  • ¾ Cup Frozen Sliced Carrots
  • ¾ Cup Frozen Sliced White Mushrooms
  • 2 Medium Stalks Celery Trimmed And Chopped
  • ¾ Cup All-Purpose Flour
  • 6 Cups Vegetable Broth
  • 1 Cup Half And Half
  • 2 Cups 8 Ounces Shredded Sharp Cheddar Cheese
  • 1 12-Ounce Bag Frozen Broccoli Florets
  • 1 12-Ounce Bag Frozen Cauliflower
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Ground Black Pepper

Instructions

  • Heat A Large Pot Over High Heat.
  • When Hot, Add Butter, Garlic, Onions, Carrots, Mushrooms, And Celery.
  • Sauté Until Vegetables Soften, About 3–4 Minutes.
  • Add Flour And Stir.
  • Reduce Heat To Medium-High And Cook For 1 Minute Before Adding Broth.
  • Continue To Stir And Allow The Mixture To Come To A Boil And Thicken, About 5 Minutes.
  • Add Half And Half And Cheddar.
  • Stir And Allow Cheddar To Melt And Combine With Broth Before Adding Broccoli, Cauliflower, Salt, And Pepper, About 2 Minutes.
  • Bring To A Gentle Boil, Reduce Heat, And Simmer For 5 Minutes Before
