Chicken Bacon Ranch Pasta Salad
Ingredients
- 1 lb. gemelli
- 1 tbsp. extra-virgin olive oil
- ½ lb. boneless skinless chicken breasts
- kosher salt
- freshly ground black pepper
- ½ c. cooked bacon crumbled
- ½ c. ranch dressing
- 2 tbsp. freshly chopped chives
Instructions
- In a large pot of salted boiling water, cook gemelli according to package directions until al dente.
- Drain and transfer to large serving bowl.
- Meanwhile, cook chicken: In a large skillet over medium-high heat, heat olive oil.
- Season chicken with salt and pepper and cook until golden and cooked through, about 6 per side.
- Transfer to a cutting board and chop.
- To bowl, add pasta, chicken, bacon and dressing and toss until well combined.
- Season with salt and pepper.
- Garnish with chives.
