Chicken Goulash from April Blomgren

Ingredients

  • Dashi stock – 1 cup
  • Soy sauce – ¾ cup
  • Mirin – ¾ cup
  • White sugar – ¼ cup
  • Shirataki noodles – 8 oz.
  • Canola oil – 2 tbsp.
  • Chicken sliced – 1 pound
  • Onion sliced – 1
  • Canola oil – 1 tbsp.
  • Celery sliced – 2 stalks
  • Carrots sliced – 2
  • Green onions pieces – 5
  • Mushrooms sliced – 4
  • Tofu cubes – 14 oz.

Instructions

  • Get a bowl and mix the sugar, soy sauce, and mirin and dashi stock in this bowl.
  • Take a pot and boil the noodles for 2 minutes.
  • Rinse with cold water and mix some oil in noodles.
  • Heat canola oil in a pan.
  • Cook chicken in it for about 20 minutes until tender.
  • When the chicken is cooked, add celery, mushrooms, carrot and onion in it.
  • Stir it well so all mix well.
  • Now add the green onions along with the noodles, tofu and dashi mixture.
  • Now when the entire mixture simmers, then serve it in a big bowl to enjoy it with your family!
