Chicken, Plum, and Chickpea Salad
This recipe is perfect for the hot summer months when you don't want a steaming hot meal.
Ingredients
- 1 pound chicken breast diced
- 2 plums sliced
- 1 red onion sliced
- 4 cups romaine lettuce torn
- 12 ounces chickpeas rinsed
- ¼ cup balsamic vinaigrette
Instructions
- Spray a skillet with a nonstick cooking spray.
- Cook the chicken until it is no longer pink over medium heat.
- Toss the chicken, plums, onion, lettuce, chickpeas, and vinaigrette until even mixed and coated.
