Chicken, Plum, and Chickpea Salad

Ingredients

  • 1 pound chicken breast diced
  • 2 plums sliced
  • 1 red onion sliced
  • 4 cups romaine lettuce torn
  • 12 ounces chickpeas rinsed
  • ¼ cup balsamic vinaigrette

Instructions

  • Spray a skillet with a nonstick cooking spray.
  • Cook the chicken until it is no longer pink over medium heat.
  • Toss the chicken, plums, onion, lettuce, chickpeas, and vinaigrette until even mixed and coated.
