Ingredients

Serves 1:

  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped onion
  • 1 garlic clove finely chopped
  • ½ cup drained cooked or canned chickpeas
  • 2 large eggs
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon finely chopped pimiento
  • 1 tablespoon finely chopped fresh flat-leaf parsley

Instructions

Sauté Onion, Garlic, and Chickpeas:

  • Heat 1 tablespoon of olive oil in a medium skillet over medium heat.
  • Add the chopped onion and garlic and cook, stirring, until the onion becomes wilted and transparent (about 2 to 3 minutes).
  • Add the chickpeas and continue cooking and stirring for about 5 minutes.
  • Wipe out the skillet.

Prepare Egg Mixture:

  • In a small bowl, lightly beat the eggs with a fork.
  • Season with salt, black pepper, and add the chopped pimiento and parsley.
  • Combine this mixture with the sautéed chickpea mixture and fold everything together.

Cook the Omelet:

  • Heat the remaining 1 tablespoon of olive oil in the skillet over high heat until it reaches the smoking point.
  • Quickly pour in the egg mixture and distribute it evenly.
  • Reduce the heat to medium-high and cook, shaking the skillet constantly to prevent sticking, until the edges and bottom begin to brown, and the center is less liquid.
  • Use the back of a pancake turner to neatly tuck in the edges.

Flip and Finish:

  • Carefully flip the omelet to the other side, adding more oil if necessary.
  • Continue cooking until it’s set in the center but still slightly juicy within.

Serve:

  • Slide the Chickpea Omelet onto a plate and serve hot.
  • It’s a delicious and satisfying vegetarian omelet option.
