Chilli-Roasted Vegetable Bowls
These hearty bowls of vegetables are enhanced with a little kick of chilli flavour. Don’t be afraid to experiment with your favourite vegetables

- 1 cup quartered Brussels sprouts
- 1 cup broccoli florets
- ½ small brown onion peeled and sliced into half-moons
- 1 medium red capsicum seeded and sliced
- 1 medium yellow capsicum seeded and sliced
- ¾ tablespoon olive oil
- ½ teaspoon chilli powder
- ¼ teaspoon ground cumin
- ¼ teaspoon ground coriander
Instructies
- Preheat air fryer at 180°C for 3 minutes.
- In a large bowl, combine Brussels sprouts, broccoli, onion and capsiums.
- Toss with olive oil, chili powder, cumin and coriander.
- Add vegetable mixture to ungreased air fryer basket.
- Cook for 15 minutes, tossing every 5 minutes.
- Transfer to four medium bowls and serve warm.
