Chilli-Roasted Vegetable Bowls

These hearty bowls of vegetables are enhanced with a little kick of chilli flavour. Don’t be afraid to experiment with your favourite vegetables

Ingredients

  • 1 cup quartered Brussels sprouts
  • 1 cup broccoli florets
  • ½ small brown onion peeled and sliced into half-moons
  • 1 medium red capsicum seeded and sliced
  • 1 medium yellow capsicum seeded and sliced
  • ¾ tablespoon olive oil
  • ½ teaspoon chilli powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground coriander

Instructions

  • Preheat air fryer at 180°C for 3 minutes.
  • In a large bowl, combine Brussels sprouts, broccoli, onion and capsiums.
  • Toss with olive oil, chili powder, cumin and coriander.
  • Add vegetable mixture to ungreased air fryer basket.
  • Cook for 15 minutes, tossing every 5 minutes.
  • Transfer to four medium bowls and serve warm.
