Chocolate Chip Oatmeal-Almond Cookie Dough

This easy to make recipe is the real deal, a true vegan and gluten-free breakfast cookie that is indeed a gooey and delicious breakfast partnered with milk.

Ingredients

  • 1 tbsp. of almond butter or any nut butter of your choice
  • ¼ cup rolled oats
  • 2 tbsp. almond meal
  • 2 tsp. of honey
  • ¼ cup of unsweetened applesauce
  • ¼ tsp. of baking powder
  • 1 tbsp. chocolate chips*
  • ½ tsp. of vanilla extract
  • A pinch of salt

Instructions

  • Prepare the oven by heating to 350° F
  • Grease an oven-safe dish or ramekin.
  • Set aside.
  • Except for the chocolate chips, combine the applesauce, almond butter, baking powder, vanilla, honey, and salt.
  • Add in the oats and the almond meal.
  • Stir until you have a sticky dough.
  • Mix in the chocolate chips.
  • Transfer the cookie dough in your oven safe dish or ramekin.
  • Top with additional chocolate chips and sprinkle with sea salt if desired.
  • Bake for about 18 to 20 minutes, until baked to your preferred consistency.

Notes / Tips / Wine Advice:

You can replace the chocolate chips with nuts or raisins for a healthier cookie.
