Citrus Spinach Salad with Red Onion

Ingredients
- 4 cups fresh spinach leaves washed and dried
- ¼ red onion thinly sliced into rings
- 2 tangerines peeled and segmented
Mom’s Spinach Salad Dressing:
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey or maple syrup, salt, and pepper to make Mom’s Spinach Salad Dressing.
- Set aside.
- Divide the spinach leaves between two serving plates, arranging them in an even layer.
- Top the spinach leaves with the sliced red onion rings and tangerine segments.
- Just before serving, drizzle the Mom’s Spinach Salad Dressing lightly over the salads.
- Serve immediately and enjoy the refreshing flavors of this citrus spinach salad!
