- 5 cups organic apples chopped (unpeeled)
- 2 ½ cups chopped celery
- 1 ¼ cups chopped pecans walnuts, or cashews
- ½ cup soy mayonnaise
- Lettuce leaves for serving
- Apple wedges for garnish
- Pecan halves for garnish
Instructions
- In a large mixing bowl, combine the chopped organic apples, chopped celery, chopped nuts, and soy mayonnaise.
- Toss gently until all ingredients are evenly coated.
- Cover the bowl with plastic wrap or a lid and chill the Waldorf salad in the refrigerator for 1 to 2 hours to allow the flavors to meld.
- Once chilled, spoon the salad into a lettuce-lined serving bowl.
