Coq au Vin
Don't let the fancy name fool you. This delectable French dish is simple in the slow cooker.
Ingredients
- 1 onion diced
- 5 slices cooked bacon crumbled
- ½ cup mushrooms diced
- 1 tablespoon garlic minced
- 1 teaspoon dried thyme
- 2 pounds boneless chicken breasts whole
- ⅓ cup red wine
- 1 cup chicken broth
- ¼ cup tomato paste
Instructions
- In an oiled slow cooker insert, add the onion, bacon, mushrooms, garlic, thyme, and chicken.
- Pour in the wine, broth, and tomato paste.
- Cover and cook on low for seven hours.
