- These golden waffles are also great served with syrup or honey. Because there are various shapes and sizes of waffle irons, yields may vary.
Ingredients
Makes 10 (4-inch) waffles
Prep: 20 min., Cook: 15 min.
- 1¾ cups self-rising flour
- ⅓ cup sugar
- ½ teaspoon salt
- 3 large eggs separated
- ¾ cup buttermilk
- ⅓ cup vegetable oil
- 1 cup frozen whole kernel corn thawed
- Cilantro-Lime Butter
Instructions
- Stir together first 3 ingredients in a large bowl; make a well in center of mixture.
- Stir together egg yolks, buttermilk, vegetable oil, and corn; add to dry ingredients, stirring just until dry ingredients are moistened.
- Beat egg whites at high speed with an electric mixer until stiff peaks form; fold into batter.
- Cook, according to manufacturer’s instructions, in a preheated, oiled waffle iron until golden.

Serve with Cilantro-Lime Butter.
