Corn Waffles With Cilantro-Lime Butter

Ingredients

Makes 10 (4-inch) waffles

    Prep: 20 min., Cook: 15 min.

    • cups self-rising flour
    • cup sugar
    • ½ teaspoon salt
    • 3 large eggs separated
    • ¾ cup buttermilk
    • cup vegetable oil
    • 1 cup frozen whole kernel corn thawed
    • Cilantro-Lime Butter

    Instructions

    • Stir together first 3 ingredients in a large bowl; make a well in center of mixture.
    • Stir together egg yolks, buttermilk, vegetable oil, and corn; add to dry ingredients, stirring just until dry ingredients are moistened.
    • Beat egg whites at high speed with an electric mixer until stiff peaks form; fold into batter.
    • Cook, according to manufacturer’s instructions, in a preheated, oiled waffle iron until golden.
