Crazy Coconut Drink

Coco Loco
In Mexican beach towns like Acapulco, where coconut palms grow and coconuts are green and abundant, this drink is often made on the spot. The coconut is cracked open at the top with an ax or machete, tequila or rum is mixed with the fresh coconut milk inside, and it's served with a straw. Unless you have green coconuts easily accessible, you can use canned coconut milk. Aged tequilas, like reposado or añejo, are more expensive and not needed in mixed libations, so silver tequila is called for here.

Ingredients

Makes 2 servings

  • Ice cubes
  • 8 ounces canned coconut milk
  • 2 ounces silver tequila or white rum

Instructions

  • Fill 2 (8-ounce) glasses with ice cubes.
  • Pour 4 ounces of coconut milk in each glass and add the tequila or rum.
  • Stir.

Serve cold.
