Creamed Potatoes

Ingredients

  • 8 medium-sized potatoes
  • salt
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • ½ tsp. salt
  • dash of pepper
  • 2 cups milk
  • ¾ cup cheese grated (optional)

Instructions

  • Peel and dice potatoes.
  • Cook until soft in water, slightly salted.
  • Drain until nearly dry.
  • While potatoes cook, melt butter or margarine.
  • Stir in flour and seasonings to form paste.
  • Gradually add milk, over heat, stirring constantly.
  • When sauce comes to boil, cook for 1 minute until it is smooth and thickened.
  • Add cheese, if desired, stirring until it melts.
  • Fold sauce into cooked potatoes and serve.
