Ingredients

  • 4 boneless skinless chicken breasts, pounded thin
  • 4 oz. cream cheese softened
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1 tsp chopped chives
  • 8 slices bacon

Instructions

  • Preheat your oven to 325°F (165°C).
  • Line a baking sheet with parchment paper or foil.
  • In a small bowl, mix together the cream cheese, garlic powder, parsley, and chives until well combined.
  • Spread a layer of the cream cheese mixture evenly over the inside of each chicken breast.
  • Starting from the smallest end, roll up each chicken breast tightly.
  • Wrap 2 slices of bacon around each rolled chicken breast, securing them with toothpicks if needed.
  • Place the chicken roll-ups seam side down on the prepared baking sheet.
  • Bake in the preheated oven for 30-40 minutes, or until the chicken is cooked through and the bacon is crispy.
  • If desired, broil the chicken roll-ups for an additional 5 minutes to brown the bacon further.
  • Remove toothpicks before serving.
