Equipment

  • 9×13 inch baking pan

Ingredients

  • 3 tablespoons butter or margarine
  • 2 cups cubed ripe tomatoes
  • cup chopped onion
  • 6 oz. can tomato paste
  • 1 tablespoon basil leaves
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons minced fresh garlic
  • 3 whole boneless chicken breasts skinned, cut in half

For Topping:

  • 1 cup fresh bread crumbs
  • ½ cup chopped fresh parsley
  • 2 tablespoons butter or margarine melted
  • 6 oz. Mozzarella cheese cut into strips

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a 9×13 inch baking pan, melt 3 tablespoons of butter in the oven.
  • In a medium bowl, stir together the remaining sauce ingredients except for the chicken; set aside.
  • Place the chicken in the baking pan, turning to coat with butter.
  • Spoon the sauce mixture over the chicken.
  • Bake for 30 to 40 minutes until the chicken is no longer pink.
  • Meanwhile, in a small bowl, stir together all the topping ingredients except for the cheese.
  • Place the cheese strips over the chicken and sprinkle with the topping mixture.
  • Continue baking for 5 to 10 minutes or until the chicken is fork-tender and the bread crumbs are brown.
