Creamy Tomato Basil Chicken Bake

- 9×13 inch baking pan
Ingredients
- 3 tablespoons butter or margarine
- 2 cups cubed ripe tomatoes
- ⅓ cup chopped onion
- 6 oz. can tomato paste
- 1 tablespoon basil leaves
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 teaspoons minced fresh garlic
- 3 whole boneless chicken breasts skinned, cut in half
For Topping:
- 1 cup fresh bread crumbs
- ½ cup chopped fresh parsley
- 2 tablespoons butter or margarine melted
- 6 oz. Mozzarella cheese cut into strips
Instructions
- Preheat the oven to 350°F (175°C).
- In a 9×13 inch baking pan, melt 3 tablespoons of butter in the oven.
- In a medium bowl, stir together the remaining sauce ingredients except for the chicken; set aside.
- Place the chicken in the baking pan, turning to coat with butter.
- Spoon the sauce mixture over the chicken.
- Bake for 30 to 40 minutes until the chicken is no longer pink.
- Meanwhile, in a small bowl, stir together all the topping ingredients except for the cheese.
- Place the cheese strips over the chicken and sprinkle with the topping mixture.
- Continue baking for 5 to 10 minutes or until the chicken is fork-tender and the bread crumbs are brown.
