- ½ cup fresh chopped parsley
- ¾ cup cubed cream cheese
- 1 ¾ cups uncooked linguine
- ¼ teaspoon salt
- 2 cans diced tomatoes with basil garlic, and oregano, undrained
- 1 carton unsalted chicken stock
- 2 minced garlic cloves
- 1 medium chopped onion
- 1 pound ground turkey
- ½ pound chopped and thick bacon slices
Instructions
- In a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally.
- Remove the bacon with a slotted spoon, placing slices on paper towels.
- Discard drippings.
- In the same pan, crumble and cook the turkey with garlic and chopped onion over medium-low heat until the turkey changes color from pink, about 5 to 7 minutes.
- Mix in chicken stock, salt, and tomatoes.
- Bring to a boil.
- Add half of the bacon and linguine, then bring to a boil again.
- Reduce the heat, cover, and simmer for 10 minutes or until the linguine is tender.
- Stir in cream cheese until melted.
- Add parsley and let it sit for 5 minutes.
