  • 2 teaspoons olive oil
  • 1 pound ground chicken
  • Salt and ground pepper to taste
  • 2 scallions sliced thinly
  • 2 cloves garlic finely chopped
  • 2 cups Napa cabbage shredded
  • 2 tablespoons soy sauce
  • 1 teaspoon Dijon mustard
  • 10 egg roll wrappers

Dipping Sauce:

  • cup lite soy sauce
  • cup Champagne vinegar
  • 2 tablespoons molasses
  • 1 tablespoon sesame oil
  • ½ teaspoon chili powder

Instructions

  • Heat the oil in a cast-iron skillet until sizzling, then add the ground chicken and cook for 3-4 minutes, crumbling with a fork.
  • Season with salt and pepper.
  • Stir in the scallions, garlic, and cabbage, and sauté for an additional 4 minutes.
  • Remove from heat, add soy sauce and mustard, and stir to combine.
  • Place 1-2 tablespoons of filling in the center of each egg roll wrapper.
  • Roll the corner over the filling, brush with water, fold in the sides, and continue rolling to seal.
  • Preheat the Air Fryer to 375°F.
  • Arrange egg rolls in the Air Fryer, working in batches, and cook for 13-16 minutes, turning halfway.
  • Combine all dipping sauce ingredients in a mixing bowl.
  • Serve the egg rolls warm with the dipping sauce.
