Crispy Chicken Egg Rolls with Spicy Soy Dipping Sauce

Ingredients
- 2 teaspoons olive oil
- 1 pound ground chicken
- Salt and ground pepper to taste
- 2 scallions sliced thinly
- 2 cloves garlic finely chopped
- 2 cups Napa cabbage shredded
- 2 tablespoons soy sauce
- 1 teaspoon Dijon mustard
- 10 egg roll wrappers
Dipping Sauce:
- ⅓ cup lite soy sauce
- ⅓ cup Champagne vinegar
- 2 tablespoons molasses
- 1 tablespoon sesame oil
- ½ teaspoon chili powder
Instructions
- Heat the oil in a cast-iron skillet until sizzling, then add the ground chicken and cook for 3-4 minutes, crumbling with a fork.
- Season with salt and pepper.
- Stir in the scallions, garlic, and cabbage, and sauté for an additional 4 minutes.
- Remove from heat, add soy sauce and mustard, and stir to combine.
- Place 1-2 tablespoons of filling in the center of each egg roll wrapper.
- Roll the corner over the filling, brush with water, fold in the sides, and continue rolling to seal.
- Preheat the Air Fryer to 375°F.
- Arrange egg rolls in the Air Fryer, working in batches, and cook for 13-16 minutes, turning halfway.
- Combine all dipping sauce ingredients in a mixing bowl.
- Serve the egg rolls warm with the dipping sauce.
