Ingredients

  • Juice of 1 orange reserve the peel
  • ¼ cup plus 1 tablespoon honey
  • 3 tablespoons wine vinegar
  • 3 tablespoons sherry
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Pepper to taste
  • 1 duck about 3 pounds
  • 1 gallon boiling water
  • 1 onion chopped

Instructions

  • In a mixing bowl, combine orange juice, honey, wine vinegar, sherry, soy sauce, sesame oil, and pepper.
  • Bring the mixture to a boil and let it cool, creating a flavorful glaze.
  • Pierce the skin of the duck all over with the tip of a knife.
  • Pour boiling water over the duck and pat it dry with paper towels.
  • Place chopped onion and the reserved orange peel inside the cavity of the duck.
  • Cook the duck over indirect coals for about 3 hours, basting it with the prepared glaze every 30 minutes.
  • Ensure the internal temperature reaches 170ºF for a fully cooked duck.
