- 1 pound chicken tenderloins chopped
- Sea salt and ground black pepper to taste
- 1 teaspoon shallot powder
- 1 teaspoon fajita seasoning
- 2 bell peppers seeded and diced
- 4 flour tortillas
- Salsa
- 1 ancho chili pepper seeded and finely chopped
- 2 ripe tomatoes crushed
- 1 bunch fresh coriander roughly chopped
- 1 lime juiced
- 2 tablespoons extra-virgin olive oil
Instructions
- Toss the chicken with salt, pepper, shallot powder, and fajita seasoning mix.
- Roast in the preheated Air Fryer at 390°F for 9 minutes.
- Add the bell peppers and roast for an additional 8 minutes.
- For the salsa, mix the chili, tomatoes, and coriander in a bowl.
- Squeeze over the lime juice, add olive oil, and stir to combine well.
