Drunken Pineapple Drink
Piña BorrachaBring a little of the ambiance of Mexican seaside resort hotels to your home, by making this tempting drink for a party. Start this drink a full day before serving, and be sure your pineapple is very ripe and sweet. Serve the punch ice cold in sherry glasses like an aperitif or a liqueur.
Ingredients
Makes 8 servings
- 1 whole fresh ripe pineapple about 2 pounds
- 2 cups silver or gold tequila
- 1 cup fresh orange juice
Instructions
- Peel the pineapple and remove the eyes.
- Cut lengthwise into quarters and cut into 1-inch pieces.
- Then, with a large sharp knife, coarsely chop the pineapple.
- Put the chopped pineapple, tequila, and orange juice in a large glass jar.
- Cover and refrigerate 24 hours.
- Pour through a fine-mesh strainer into a clean glass pitcher or other glass container, and serve very cold.
