Drunken Pineapple Drink

Bring a little of the ambiance of Mexican seaside resort hotels to your home, by making this tempting drink for a party. Start this drink a full day before serving, and be sure your pineapple is very ripe and sweet. Serve the punch ice cold in sherry glasses like an aperitif or a liqueur.

Ingredients

Makes 8 servings

  • 1 whole fresh ripe pineapple about 2 pounds
  • 2 cups silver or gold tequila
  • 1 cup fresh orange juice

Instructions

  • Peel the pineapple and remove the eyes.
  • Cut lengthwise into quarters and cut into 1-inch pieces.
  • Then, with a large sharp knife, coarsely chop the pineapple.
  • Put the chopped pineapple, tequila, and orange juice in a large glass jar.
  • Cover and refrigerate 24 hours.
  • Pour through a fine-mesh strainer into a clean glass pitcher or other glass container, and serve very cold.
