Eggplant Parmie Sticks

A parmie (or parma depending on where you’re from or your preference) is a classic ham and Parmesan cheese topping and a favourite across the country. We’ve created an easy low-carb version by adding it to eggplant and switching out the ham for crushed pork rinds. For extra nutritional value, keep the skins on your eggplant sticks

Equipment

Ingrediënten

  • 2 large eggs
  • 1 ½ tablespoons thickened cream
  • ½ cup crushed pork rinds
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • 1 medium eggplant cut into 1cm rounds, then sliced into sticks
  • ½ cup no-sugar-added napolitana sauce warmed

Instructies

  • Preheat air fryer to 200°C for 3 minutes.
  • Whisk together eggs and heavy cream in a medium bowl.
  • In a separate shallow dish, combine pork rinds, Parmesan cheese and salt.
  • Dip eggplant sticks in egg mixture.
  • Coat in pork rind mixture.
  • Place half of the eggplant sticks in air fryer basket lightly greased with olive oil.
  • Cook for 6 minutes, then flip and cook for an additional 6 minutes.
  • Repeat with remaining eggplant sticks.
  • Transfer to a large serving plate and serve with warmed napolitana sauce for dipping.
