Eggplant Parmie Sticks
A parmie (or parma depending on where you’re from or your preference) is a classic ham and Parmesan cheese topping and a favourite across the country. We’ve created an easy low-carb version by adding it to eggplant and switching out the ham for crushed pork rinds. For extra nutritional value, keep the skins on your eggplant sticks

- 2 large eggs
- 1 ½ tablespoons thickened cream
- ½ cup crushed pork rinds
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- 1 medium eggplant cut into 1cm rounds, then sliced into sticks
- ½ cup no-sugar-added napolitana sauce warmed
Instructies
- Preheat air fryer to 200°C for 3 minutes.
- Whisk together eggs and heavy cream in a medium bowl.
- In a separate shallow dish, combine pork rinds, Parmesan cheese and salt.
- Dip eggplant sticks in egg mixture.
- Coat in pork rind mixture.
- Place half of the eggplant sticks in air fryer basket lightly greased with olive oil.
- Cook for 6 minutes, then flip and cook for an additional 6 minutes.
- Repeat with remaining eggplant sticks.
- Transfer to a large serving plate and serve with warmed napolitana sauce for dipping.
