Elevated Moscow Mule Jelly Elixirs

Ingredients
- 8.5 oz ginger beer
- 1 ½ oz lime juice
- 2 envelopes 2 Tbsp unflavored gelatin
- 6 ounces vodka
- Nonstick cooking oil spray for molds
- Food coloring optional
Instructions
- In a small pan, combine ginger beer and lime juice (and food coloring if desired).
- Sprinkle gelatin over the surface of the liquid and allow it to rest for 2 minutes to activate.
- Warm the gelatin-ginger beer mixture over medium-low heat for 2 minutes, stirring constantly.
- Avoid boiling.
- Remove the mixture from heat and stir in the vodka.
- Spray your chosen molds with nonstick oil to prevent sticking.
- Pour the liquid into the molds of your choice – ice cube trays, sample cups, mini-muffin tins, or sheet pans.
- Refrigerate the molds for at least 4 hours, preferably overnight, until the jello shots are completely set.
- Remove the jello shots from the molds by sliding around the edges with a thin knife or cutting them into desired shapes if using a sheet pan.
- Keep the finished jello shots refrigerated until serving.
- Serve cold to enhance the refreshing experience.
