Ingredients

  • 8.5 oz ginger beer
  • 1 ½ oz lime juice
  • 2 envelopes 2 Tbsp unflavored gelatin
  • 6 ounces vodka
  • Nonstick cooking oil spray for molds
  • Food coloring optional

Instructions

  • In a small pan, combine ginger beer and lime juice (and food coloring if desired).
  • Sprinkle gelatin over the surface of the liquid and allow it to rest for 2 minutes to activate.
  • Warm the gelatin-ginger beer mixture over medium-low heat for 2 minutes, stirring constantly.
  • Avoid boiling.
  • Remove the mixture from heat and stir in the vodka.
  • Spray your chosen molds with nonstick oil to prevent sticking.
  • Pour the liquid into the molds of your choice – ice cube trays, sample cups, mini-muffin tins, or sheet pans.
  • Refrigerate the molds for at least 4 hours, preferably overnight, until the jello shots are completely set.
  • Remove the jello shots from the molds by sliding around the edges with a thin knife or cutting them into desired shapes if using a sheet pan.
  • Keep the finished jello shots refrigerated until serving.
  • Serve cold to enhance the refreshing experience.
